This is a nice chocolate cheesecake that me and my best friend tried cooking yesterday. We thought that it will be sweet as hell but it's not, not even at all. Though I'm a sucker for sweets, I still really liked it a lot. The recipe is very simple and the steps are sooo easy that even water-burners could do it. The only downside is that it takes some time and I'm always so anxious to taste it faster but nevertheless, it's still totally worth it.
For the base:
* 125g simple chocolate cookies
* 75g of butter
For the filling:
* 500g of curd
* 450g canned cherries without pips
* 200g of chocolate (we used milk and dark chocolate bars)
* 1,5 tbsp of starch
* 1/3 glass of sugar
* 2 eggs
First step is to break the cookies in smaller pieces and put them in a blender so that they would turn into really smalls crumbs. Mix it with room temperature butter so that it would become a one piece dough.
Put it in a 24cm diameter tin and leave it in the fridge for 30min.
The second step is to brake the chocolate into smaller pieces and to melt it in a pot of hot water (just don't mix chocolate with water).
Then put the cherries on some paper towels to drain them and after that roll them in the starch (don't overdo it, they don't need to be all white, just a little more slippery)
Next step is to whisk up the curd with sugar. Make sure there's no big pieces left. Then mix the eggs one by one.
Pour in the liquid chocolate and mix it so that there's no white curd left.
Then pour the cherries in and stir it again.
After that take it out, leave it to cool down for a bit.
The final step is to put it in the fridge again for at least three hours and Voilà your perfect little cheesecake is done!
